This category is a bit of a catchall, containing subsegments that aren’t quite big enough yet for their own category. From the looks of their growth, barbecue chains are on their way to being analyzed separately by Technomic, as they not only emerge as the largest concepts (Famous Dave’s, Sonny’s BBQ), but also some of the fastest growing (Lucille’s Smokehouse Bar-B-Que, Jim ‘N Nick’s Bar-B-Q).
