Costa Fruit & Produce to Convene Food Safety Symposium

"The purpose of this symposium is to minimize the risk of a food borne illness through industry knowledge and best practices and will take an in-depth look at food safety issues related to the produce from the farm to the foodservice operator," said Manny Costa, president of the ID Top 50 distributorship.

A host of food safety and industry leaders are expected discuss the range of food safety issues beginning in the growing area through the supply chain right up to the kitchen handling level, Costa said.

"With the recent foodborne outbreaks related to produce and resulting concern over the safety of fresh produce, we felt that a symposium on this topic would be of keen interest to the hospitality community." said Peter Christie, association president.

Among the speakers are: Bryan Silbermann, president of the Produce Marketing Association; Michael Jantschke , director of food safety, Pro*Act; Lisa M. Berger, president, Berger Food Safety Consulting; Andrea Fontaine, laboratory director for Food Research Laboratories; Mary Jordan of the Massachusetts Department of Agriculture; and the MRA's Christie.
