Snooze, an A.M. Eatery is what happens when you add pina coladas to pancakes.

This week’s edition of Restaurant Business' podcast, "A Deeper Dive," features David Birzon, CEO of the Denver-based chain, who talks about the impact of adding a full bar to a predominantly morning-focused concept.

Snooze is part of a rapidly growing group of restaurant chains that serve only breakfast and lunch and are closed through dinner. Snooze’s sales rose 34% last year, according to Technomic data.

And while the chain’s full bar is drawing customers, it’s not the only lure. In this episode, Birzon talks about the importance of good service, and what Snooze does to improve that service while getting customers to try new items.
