Pieology names a COO and chief information officer

Luna Grill veteran Bijan Sami will hold dual roles at the fast-casual pizza concept.

Fast-casual pizza chain Pieology named industry vet Bijan Sami as its COO and chief information officer Wednesday.

Sami comes to the brand after 17 years at Mediterranean fast casual Luna Grill, where he served as chief operating officer, chief procurement officer, and had technology and systems responsibilities.

He also spent more than a decade in the semiconductor industry before getting into restaurants.

“Bijan brings a wealth of leadership and operating experience, along with the critical technical knowledge we need to continue our global growth and expansion,” says Gregg Imamoto, Pieology’s CEO. “It goes without saying that Bijan’s full spectrum of restaurant systems expertise will be a great addition to the Pieology team.”

Pieology was founded in Tustin, Calif., in 2011 and operates and franchises 130 units of its customizable pizza concept.

Last August, the chain brought on a Yum Brands veteran, Adrienne Berkes, as its chief marketing officer.

The fast casual has seen its sales decline in recent years, falling more than 21% from 2019 to 2020, according to Technomic data.
