Blueberry-Onion Sauced Pork Tenderloin
Pork and fruit always pair well. This unusual combination of bluberries and tomatoes with carmelized onions makes a delicious and zippy flavored sauce for the tender pork.
Ingredients
2 1-lb. pork tenderloins, trimmed
4 tbsp. butter
4 medium onions, sliced
4 tbsp. sugar
1⁄2 cup port wine or sweet sherry
1⁄4 cup balsamic vinegar
2 cups blueberries
2 cups cherry tomatoes, chopped
Steps
- In a large skillet over medium-high heat, melt the butter and sauté the onions until golden brown. Add sugar and cook 3 min. more to caramelize onions.
- Add port, vinegar, blueberries, and tomatoes. Bring mixture to a boil, then remove from heat. Season to taste and reserve.
- Season tenderloin and cook under broiler until desired doneness. Thinly slice tenderloin and serve with sauce.
