Vegan Coconut Sticky Buns

This down-home sticky bun recipe is sure to bring a smile to anyone's face. Offer this vegan option at brunch or as a dessert.
Ingredients
8 cups flour
4 tbsp. yeast
1 cup sugar
1 cup vegan margarine
3 cups coconut milk
1 tsp. salt
Caramel Sauce
4 cups brown sugar
2 cups coconut milk
2 cups shredded coconut (optional)
Steps
- Prepare caramel sauce: Heat brown sugar in large saucepan over medium-high heat until melted. Slowly add coconut milk. Stir until smooth. Pour into bottom of oven-safe hotel pan. Set aside.
- Place dough ingredients in mixer. Mix for 10 minutes.
- Roll out dough into 1/2 inch thick rectangle. Brush with 1/4 cup water.
- Sprinkle mixture of 1 cup sugar and 1 tablespoon cinnamon over dough.
- Roll on long end into log. Slice into 12 evenly sized rolls.
- Place rolls flat side down in pan on top of caramel. Cover, set on counter, allow dough to proof for 20 minutes.
- Bake at 325°F for 25 minutes.
- Remove from oven, cool in pan for 5-10 minutes. Turn out entire pan onto serving dish or platter. Serve.
