Tinkering with Tradition

I have been working on making some of the most popular traditional Indian dishes healthier. Chicken Tikka Masala, for example, is always cooked with heavy cream and butter or oil. I experimented with cooking the chicken simply in its own juices, along with the rest of the traditional ingredients. The result is a dish that’s has a creamier texture, no loss of flavor and just 220 calories/7 grams of fat per 8-ounce portion. It’s a hit with our customers and has helped push our revenues up. Thinking out the box can pay huge dividends.
