New hires at The Bartolotta Restaurants and Innovative Dining Group

Sam Hallak has joined Los Angeles-based Innovative Dining Group (IDG) as the new chief operating officer. Hallak brings years of experience in operations, ranging from recruiting, developing and fostering camaraderie in the workplace, the company said. IDG is the parent company for Sushi Roku and BOA Steakhouse.

Alexandra Lawrence

The 17-unit juice concept South Block has named Alexandra Lawrence director of marketing. Lawrence worked previously at Sweetgreen, leading in-store loyalty programs and marketing that brand’s first drive-thru and automated kitchen formats.

Morgan De Paulo

Chef Morgan De Paulo is the new executive chef of The Line San Francisco, where he will lead food and beverage for the hotel, as well as the rooftop restaurant Rise Over Run and the lobby bar Dark Bar. Morgan is a former corporate executive chef from Mina Restaurant Group and was the chef de partie at José Andrés Restaurant Group.

Conrad Gass has been named director of food and beverage at the Shore Hotel in Santa Monica, California, a move that comes as the hotel launches the new restaurant Shoreside. Gass worked previously as food and beverage manager at The Huntley Hotel in Santa Monica, and he helped relaunch the 1 Hotel West Hollywood before that.

Kai Speth

Milwaukee-based Bartolotta Restaurants has named Kai Speth chief operating officer. A 30-year hospitality industry veteran, Speth was most recently vice president of hospitality at the Durango Casino & Resort in Las Vegas.

David Schaumburger

David Schaumburger is the new executive chef at The Ritz-Carlton Denver, which includes the recently renovated signature restaurant Elway’s Downtown. Schaumburger previously served as executive sous chef at The Ritz-Carlton, Naples, and he has worked with Marriott International in Dubai and Germany.
