Plant-based and plant-forward items are skyrocketing on menus, as a large swath of consumers—not just vegans and vegetarians—seek these options. While faux meat burgers are getting lots of buzz, a number of operators are innovating with other ingredients to offer more plants on the plate. Panera puts its veg-centric idea between the bread with its Mediterranean Veggie sandwich. Playing to the idea that flavor-forward options help sell veggie dishes in the sandwich category, it’s composed of peppadew peppers, feta, cucumbers, greens, tomatoes, red onions and cilantro-jalapeno hummus on tomato-basil bread.
