Consumers’ increased focus on healthy eating has inspired foodservice operators to diversify their menus. But even with an elevated interest in plant-based proteins (vegetables, whole grains, beans and legumes, for example), most consumers still enjoy animal proteins such as pork and chicken. In fact, more than two-thirds of Americans agree that meat is essential to a balanced diet, and more than half believe a meal isn’t complete without meat.

With that in mind, successful new menu items should combine plant- and animal-based ingredients, rather than going fully vegetarian or vegan, to appeal to the widest pool of diners.
