Flaky croissants are the perfect vehicle for this summery lobster roll recipe from General Mills Foodservice.
Ingredients
24 freezer-to-oven croissants
3 2/3 cups lobster meat, cooked, chopped
1/3 cup mayonnaise
1/4 cup celery, diced
1 Tbsp. tarragon, finely chopped
1 Tbsp. lemon zest
Steps
1. Add cooled lobster meat and mayonnaise to a mixing bowl; gently stir to combine.
2. Add celery, tarragon and lemon zest and gently combine; keep cold.
3. To assemble: Slice down from the top of croissant, 3/4 through with a bread knife; split open like a hot dog bun.
4. Deposit filling using #30 scoop (1 oz.) into croissant. Serve 2 sliders per serving immediately.
Tips
Garnish with chives for an elevated look.
