Vinz moves to TooJay’s

Jim Vinz has joined the 26-unit TooJay’s deli chain as chief executive officer with a mandate to expand and update the business, the company announced today.

Vinz was previously president and co-CEO of Le Duff, the parent company of Bruegger’s Bagels, Le Madeleine and Mimi’s Café. His LinkedIn page indicates he left that company in September and immediately joined TooJay’s, though the change was not announced until today.

Vinz has spent more than three decades in the restaurant business, including a number of years as president and chief operating officer of Corner Bakery.

The change in jobs marks a clear shift in perspective for the operations specialist (Vinz had earlier served as vice president of operations for Bay Street Restaurants, Brinker International’s experiment with a seafood dinnerhouse.) Le Duff is an international company with more than 1,100 restaurants. TooJay’s operations has two dozen outlets, all in Florida.
