The big dog of the Australian coffee concepts, the chain made its U.S. debut in New York City in 2013 with limited-service shops with a small food menu as well as full-service cafes that offer beer and wine. It has since grown to 17 locations and has plans for more. In addition to new storefronts, Bluestone—which bills itself as a “classic Australian cafe experience”—recently opened a 10,000-square-foot roastery in Brooklyn to supply its U.S. units.
