Large groups tend to be a profitable proposition for full-service restaurants. But they can also present an operational challenge. TGI Fridays looked to ease this problem with a new process for hosting large parties. Groups of 10 or more can now book an “event” online and order in advance from preset party packages. This allows the kitchen to prepare and simplifies things for the front of house. The chain expected the new service to be a source of incremental business, especially during the holidays.
