Platters of pancakes fly out of the kitchen at IHOP, but they require a fork and knife to eat. VP of Culinary Arthur Carl turned that requirement on its head with the introduction of Pancake Tacos. The mashup comes in four variations—two sweet and two savory to fit both breakfast and lunch. The Breakfast Pancake Taco is filled with scrambled eggs, bacon, cheese and optional salsa, but for sweets lovers, there’s the Fresh Strawberry Cheesecake Pancake Taco and Caramel Banana Pancake Taco. Rounding out the selection is a Country Chicken and Gravy Pancake Taco. The pancakes are made slightly smaller, more like street taco size, and the fillings are mostly cross-utilized from IHOP’s existing pantry. The only new SKU: the metal taco holders.
