Salt & Straw ice cream launched its second Upcycled Foods Series featuring five new flavors created by head ice cream innovator and co-founder Tyler Malek. All the varieties focus on reusing or upcycling wasted ingredients, such as whey from yogurt making, imperfect potato chips and spent grain from beer brewing. There’s Chocolate Caramel Potato Chip Banana Bread produced in collaboration with Urban Gleaners; Passionfruit Yuzu Mochi Donuts & Whey Curd through a partnership with The Spare Food Co.; Salted Caramel & Chocolate Brownies with Renewal Mill’s okara flour derived from soymilk production; Malted Chocolate Barley Milk made with EverGrain Brewery; and Cacao Pulp & Chocolate Stracciatella Gelato in conjunction with Blue Stripes, using cacao pods, pulp and nibs.
