When the pandemic hit, the fast-casual chain Pincho, like everybody else, got a bunch of takeout business. And that continued even as its doors opened for dine-in service again. And that meant a lot of phone calls. So the company brought in robots to take those orders instead. With the help of its private-equity owner, Pincho started using an AI-ordering system to handle phone orders. That was key for a company that almost needed a full-time employee per restaurant to handle all those orders.
