Tigawok is a new Asian quick-service concept that launched recently in Los Angeles with automated woks. Guests can choose dishes like mapo tofu, pepper pork or Thai basil chicken, and the robot woks do the work in three to five minutes. The technology has been in use in China, and more rudimentary auto-woks have appeared in some U.S. restaurants. But Tigawok’s equipment offers a new level of sophistication that allows for less stress on workers and consistent execution. The machines also automatically wash and sanitize between dishes.
