What started as Modern Market Eatery in Boulder, Colorado, in 2009 has grown to 29 units as a from-scratch, clean-ingredient concept known for fresh salads, grain and protein bowls, toasted sandwiches and brick-oven pizza. In 2023, it was part of the Modern Restaurant Concepts platform, which included Qdoba, owned by private-equity firm Butterfly Equity. But Modern Market was acquired in September 2024 by its first franchisee: Thrive Restaurant Group, based in Wichita, Kansas.
