A frequent presence on RB's Future 50 list, Spitz Mediterranean Street Food was started by two college students from Minnesota and Utah, who wanted to create a healthy, fast-casual Mediterranean concept. Named after the vertical method of broiling meats, Spitz serves a protein-focused menu of Doner Wraps, bowls, salads, loaded fries, gyros and more, as well as some vegan options. The restaurants also feature a rotating selection of local beers, regional wines and cocktails. If diners get bored, there's board games, shuffleboard and other entertainment.
